Hi, I am a special education teacher that has been added as people to a general education class.
How do I hide receiving all the students work in that class and just get emails regarding my student roster?

Click on the menu at the top left of Google Classroom (three lines) and choose settings at the bottom of the menu. You will be taken to a page where you can change your notification settings. However, I don’t believe there is a way to pick and choose which students in a class for which you can receive notifications.
